You can’t turn around in October without seeing a pumpkin, and for good reason. They’re colorful and substantial, delicious and plentiful. All it takes to grow a new pumpkin patch is a handful of the lightweight seeds. Luckily enough, you can find them in the dozens inside every one of every orange pumpkin. By the way, they’re classified as fruits, not veggies.

Native to North America, the US is a top pumpkin producer along with Mexico, China, India, Ukraine, and Egypt. Did you know that pumpkins grow in every continent all over the world except for Antarctica? It’s too cold up there for our orange friends!

They come in all shapes, sizes and colors from blue to white to orange with skin that’s shiny and smooth or covered in bumps. We love pumpkins because they are so versatile and have a rich history dating back to their origins in Mexico.

Here’s a gourd-eous recipe for a delicious pumpkin stew that will have your guests wanting more even if Halloween is over.

Pan-Cooked Pumpkin Prepared in SmartyPans


  • 1 cup diced pumpkin
  • 1 tablespoon chili powder
  • 6 tablespoons unsalted butter
  • Handful sage leaves
  • ¼ cup dark brown sugar
  • 1 tablespoon pepper
  • ½ cup veggie broth
  • 2 squeezes lemon juice
  • Himilayan sea salt to taste

Step 1: Prep Your Pumpkin!

We can’t lie. Prepping diced pumpkin is not easy. You’ll have to cut the top and bottom off of your pumpkin to get at the guts, and weed them out (seeds and all). Then, get out a sturdy peel and peel the pumpkin, revealing the inner wall, which you can dice up. Phew! Make sure to wear a full-coverage apron for this process.

Step 2: Dice It Up

Now, to make the perfect dish, you’ll have to dice up the pumpkin into 16 equal pieces. We suggest using a long, serrated knife that has a sturdy handle. Pumpkins are strong!

Step 3: Season and Sprinkle

Now, it’s time for your SmartyPans to step up. Place your SmartyPans on heat and start tracking your recipe. Add in 6 tablespoons of unsalted butter, then set down your 16 pieces of pumpkin in the sizzling butter on their sides.

Time for fun! Sprinkle in the seasoning we suggested above, but don’t hesitate to switch it up with a little sweetness or more heat like cinnamon or cayenne pepper.

First, we suggest sprinkling on your Himilayian sea salt and allowing the pieces to cook until they are golden brown. Make sure to shake and sift the pieces in your SmartyPans so they cook evenly.

Once one side is brown, time to flip.

Step 4: Don’t Spoil the Broth

Once you’ve browned the pumpkin, add your broth, brown sugar, chili powder, and pepper to taste. Feel free to use our suggestions above but again, SmartyPans is a remix in a pan! Do your own thing. Leave the cubes of pumpkin to sizzle for 2-5 minutes.

Step 5: Stir and Serve

On minute 5, add sage leaves for an extra bit of flavor and color, sprinkle more spices on top to taste, and let stand for one minute.
