Terri Allen: Why Sweet Potatoes?

Sweet potatoes are better for you than white potatoes. Sweet potatoes (a complex carb) are great fuel for the body and provide excellent sustained energy.

So why sweet potatoes? It’s one of the best complex carbs. Other complex carbs include the sweet potato, broccoli, cauliflower, spinach, some fruits such as plums, strawberries and apricots, as well as nuts and seeds. Sweet potatoes are an excellent source of vitamin A, potassium, vitamin C, calcium and iron. So it fuels your body, provides energy that will last and fiber that will fill you up!

I eat sweet potatoes almost daily. Try my Signature Sweet Potato recipe:


6 medium to small sweet potatoes
1 package Italian dressing seasoning
1/2 cup olive oil
Preheat over to 375
Cut potatoes in to quarter size pieces. Place in glass baking dish cover with Italian dressing seasoning drizzle olive oil cover with aluminum foil
Bake on 375 for 45 minutes
