While we often think of rice as the menu’s sideshow, this flavorful Tex-Mex fried rice recipe surely takes center stage.
Filled with sausage, veggies, jalapeno and zest, our cowboy take on fried will leave you feeling full and cozy. Better yet, ready in less than 20 minutes it might even have you yelling “Yeehaw!”
2 tablespoons vegetable oil
1 lb(s) spicy sausage meat
One 14-ounce can hominy or 2 ears of corn, kernels removed
1 small red onion, chopped
1 red bell pepper, finely chopped
1 jalapeño, seeded and chopped
2 cloves garlic, finely chopped or grated
2 cups cooked long grain white rice
¼ cup (about a handful) chopped cilantro
2 to 3 small tomatoes, seeded and diced
A few dashes hot sauce (more if you like it spicy!)
Zest and juice of 1 lime
Salt and ground black pepper

Pad Thai Ingredients
4 ounces brown rice noodles (you can get stir-fry type noodles or Pad Thai noodles – and usually that’s half a box)
1 red pepper
half a yellow onion
2 tablespoons oil
1 egg, beaten
1/2 cup peanuts, chopped
1/2 cup fresh herbs like cilantro, green onions, and basil, chopped
3 tablespoons fish sauce or vegan fish sauce substitute
3 tablespoons brown sugar (or sub another sweetener)
3 tablespoons chicken or vegetable broth
2 tablespoons white vinegar
1 tablespoon soy sauce
1 teaspoon chili paste (sambal oelek)
